Sunday with Pancakes

Guys. You are welcome. Seriously. You are welcome. I basically eat eggs with Sriracha and bacon every weekend, but NOT this weekend. This weekend I am sharing one of the best breakfasts I have ever had. Did I mention they are gluten free? Free of gluten and full of punch your mother in the face kind of flavor. Yup. That good.

Sometimes you just need to spend more than 5 minutes making a Sunday breakfast. Sometimes you need to put a little TLC into your breakfast. You deserve it. Hell, I know I definitely deserve it, especially after eating/drinking things I probably shouldn’t have last night at our friends 30th Gatsby inspired birthday party. So yes, this morning? This morning I deserve to let my mouth and stomach party all morning long.

Ladies and Gents, our millions  2 followers/readers, I present you with Orange Blueberry Oatmeal Cottage Cheese Pancakes with Maple Roasted Strawberries.  Yup. That happened. SO. AMAZING. Gluten free oats with orange zest, cottage cheese and fresh blueberries. WOWSERS. If you have never roasted strawberries before then I hate you. Not really but you are definitely missing out. It brings out insane flavors. Also? Warm strawberries on warm pancakes. Its a no brainer.

These babies are packed with goodness and super healthy! No flour, no egg yolks, no refined sugar! They also taste like dessert, like you shouldn’t be allowed to eat them for breakfast. But you can! And you will! And you will fall to your knees and thank the pancake gods for allowing such a thing to exist!

Here’s how to roast strawberries. Chop up 5-7 strawberries into quarters. Pre heat oven to 350 F. Drizzle 1/2 TBSP pure maple syrup on top and place on foil lined baking sheet. Roast for 12-15 minutes. Boom. Done.

INGREDIENTS ( for pancakes)
3/4 cup gluten free oats
1/2 cup no salt added cottage cheese
1 TBSP Unsweetened vanilla almond milk ( or regular milk )
1 Tsp Bourbon Vanilla ( or regular vanilla )
1 Tsp cinnamon
1  zested orange
3 egg whites
1/8 Tsp baking powder
1/2 cup or more washed blueberries

Combine all ingredients except the blueberries into a food processor until smooth. Batter will be a little thicker than regular pancake batter. Pour batter into a bowl and fold in blueberries. This batter makes 3 large pancakes or 4-5 medium pancakes. Its basically enough for a one person breakfast. Be sure to double it if you are making for 2-3 people. Pour batter into greased pan in your desired sized pancake and cook 3-4 minutes each side on medium heat. Cry from deliciousness after devouring your entire plate. Don’t forget to pour the strawberries on top. These pancakes do not even need any syrup that’s how good they are!!
